This session describes how the exciting change from cafeteria to restaurant takes place, focusing on case studies of actual school restaurants that I've helped transform. The presentation features insights on:

- market research techniques to help find out what kids want -- and also to get them pumped about the coming changes

Years ago, we used thinking like this to boost participation at the Gator Galley Restaurant (at Davidsonville Elementary School in Maryland) by 52% the first year, by 77% over three years, and by 110% over 5 years. Ever since then, we've used this template to help turn other cafeterias into School Restaurants.
